How does the V114N compare with a Yamaha U1?

The U1 is 121cm and the V114N is 114cm, so the U1 has longer strings, a larger soundboard and a fuller bass, and it is the instrument teachers tend to name first. The V114N costs meaningfully less, takes up slightly less wall, and for a household where the piano is played daily but not professionally it does the same job. If you are choosing between them, play both: the difference is real but it is smaller than the price gap suggests.

Is a polished mahogany Yamaha a good choice, or should I hold out for black?

Black is the default because studios and schools buy it, not because it sounds different. In a home with wooden furniture a mahogany cabinet often looks considerably better, and because fewer are made they can be harder to find. There is no musical difference at all between the two finishes.
